Ideally, a burrito should be very spicy, although what kind of ideal are we talking about, because a great many recipes for this dish can be found, and one single classic cooking option still does not exist. The main thing to be guided by when preparing a burrito is your own taste; your imagination will also come in handy. It’s worth trying to make a burrito in such a way that, after taking a small bite, you can feel the heat of the scorching sun, the clear rhythm of salsa and the cool shadow of a huge Mexican cactus.

An invariable part of any burrito has always been the tortilla - this is the same flatbread in which the filling is wrapped. Mexicans use this flatbread not only for preparing a variety of dishes; for them, a tortilla is a plate, fork and spoon rolled into one. Almost any Mexican dish can be placed on a tortilla and eaten with the same tortilla, you can use it to scoop up the sauce, hold a piece of meat and extinguish the fire in your mouth that has raged from a small chili pepper. Traditionally, tortillas are baked over an open fire in clay pans called comals, but this is how they do it in Mexico, which is far from ours. We, residents of Russia, have three options for getting tortillas: buy the finished product in a store, although it’s not at all a fact that the bright packaging with a catchy name will contain exactly what you need, replace the tortilla with lavash, but then your burrito will be called a banal shawarma, or try baking your own Mexican tortillas. We lean towards the latter option and suggest starting to prepare a burrito by preparing the tortilla.

To make a tortilla at home, you will need 2 cups of corn flour, 1 teaspoon of salt, 50 grams of lard or margarine and about a glass and a quarter of hot water. Pour the flour into a deep bowl, add salt to it and stir. Grate the lard or margarine on a coarse grater and add to the flour. Stir and begin rubbing the flour and lard with your hands until the mixture begins to crumble. Then pour in hot water in a thin stream, remembering to stir the dough until it becomes soft and pliable. Add a little more flour and knead the dough, divide it into 10-12 pieces and cover with a warm, damp towel for a few minutes. Roll each piece of dough into a ball. Dust the board with flour and use a rolling pin to roll out each ball into a very thin cake. Heat a cast iron frying pan, reduce the heat and, without adding any oil, fry each tortilla on both sides for about 30-40 seconds. Cover the finished tortillas with a towel.

Half the battle is done! All that remains is to choose which burrito to cook. And there is plenty to choose from. You can make burritos with meat, poultry, vegetables, spicy and even sweet. You can wrap anything in a thin tortilla, for example, boiled beans or rice, meat and eggs, bell peppers and onions, and definitely some kind of sauce. Preparation:
Remove bones from chicken breasts and rinse meat thoroughly under running water. Salt and pepper the chicken and place in a deep bowl. Squeeze the juice out of the lime and add 2/3 of it to the chicken. Leave the chicken to marinate for 15 minutes. Wash and cut the pepper into thin strips, peel and cut the onion into rings, chop the tomatoes. If you have a grill pan, fry the chicken on it; if not, you can use a regular frying pan. Peel the seeds and cut the bell peppers into thin strips, peel and chop the tomatoes, finely chop the fresh herbs. Place a frying pan on the fire and heat a little olive oil in it, add green beans, chopped peppers and tomatoes. Simmer over low heat for 10 minutes, then add rice, salt and pepper and add herbs. Place the slightly cooled filling into tortillas, form a burrito and place in a preheated oven for a few minutes.

50 g butter,
8 tortillas,
400 g cherry jam,
200 grams of fresh pitted cherries,
1 tsp cinnamon,
1 tbsp. powdered sugar.

Preparation:
Divide the jam and cherries evenly into 8 flatbreads and roll the tortillas into envelopes. Grease a baking sheet with oil and place the resulting envelopes on it. Brush each envelope with melted butter and sprinkle with cinnamon. Bake the sweet burrito in an oven preheated to 190°C for 12-15 minutes. Sprinkle the finished burrito with powdered sugar and serve.

This is a Mexican dish famous all over the world, consisting of a tortilla and a filling wrapped in it, and there are such an incredible number of filling options that even the Mexicans themselves do not know all of them. Where does a burrito start?

Any burrito recipe starts, of course, with the tortilla. And to make our dish as Mexican as possible, we will not replace tortillas (as the Mexicans call flatbread) with pita bread, but will bake them ourselves. So let's get started!

Let's bake tortillas!

Take two and a half glasses of flour, a glass of hot water, 50 g of fat (butter or margarine), a teaspoon of salt. Pour two glasses of flour and salt into a deep bowl, then stir in the fat and knead it thoroughly with your hands, mixing it with the flour. Pour in a glass of hot water (not boiling water!), while stirring the dough thoroughly with a fork, transfer it to the table and continue kneading, gradually adding the remaining flour. The dough should be manageable and not very tough. Cover it with film and leave for half an hour to rest. Then knead the dough a little more and divide it into pieces the size of a tennis ball. Roll them into thin flat cakes, which we bake in a dry frying pan for about thirty seconds until brown spots appear. As they bake, stack the cakes in a mound, interspersing them with parchment sheets. Wrap the finished cakes in film to avoid drying out, then it will be easy to wrap the filling in them. Whatever burrito recipe you choose, this flatbread will go perfectly with it.

Let's make the filling!

Now let's start preparing the filling, and so that you have plenty to choose from, we will present two options.

Chicken burrito filling

You will need a couple of chicken breasts, a medium-sized onion, a glass of milk, a can of canned corn, one hundred grams of hard cheese, a tablespoon of flour, a couple of cloves of garlic, cumin, sour cream, butter and vegetable oil for frying.

Cut the chicken into cubes and the onion into rings and lightly fry them in vegetable oil. At this stage, add cumin and salt. Puree the corn, along with the juice from the can, using a blender and pour it into the frying pan. Add half a glass of milk, butter and flour. Cook over medium heat until thickened. Add garlic and simmer for another ten minutes. When the filling is ready, put it on the tortillas, sprinkle with grated cheese and wrap the tortillas on three sides. Place the burritos on a baking sheet and bake in the oven until the cheese melts.

Omelet Burrito Recipe

For this filling we take four eggs, half a glass of hard cheese, ground black pepper, sour cream, olive oil, one hundred grams of green chili pepper.

Add mushrooms. If you use raw champignons, increase the frying time to 5 minutes. Mix.

It's time to add the chopped tomatoes. Mix everything and fry for 2-3 minutes.

Next, add chopped parsley. Without greens, the burrito will not be as flavorful and beautiful! Stir and simmer a little - 2-3 minutes. That's it, the burrito filling is ready. Now comes the important part: the burrito filling.

The burrito folding deserves special attention. I tried to make it as clear as possible. Unroll the pita bread (or tortilla) and put the filling in the middle, which needs to cool slightly. Cover the top with lavash and pull it to the edge. Then we wrap the edges on the right and left and fold it into an envelope. Next, wrap the entire pita bread completely. The burrito is ready.

We also make all the pita breads. Sprinkle grated cheese on top of the burrito. And put it in the oven or microwave (you can use the grill function - this will make the cheese more rosy).

Remove the burrito from the microwave (or oven). Apply a pattern on top with mayonnaise and ketchup.

  • 200 gr. Turkey fillet
  • 2 pcs. Tortilla

Cut the chicken fillet into strips.

Fry the peppers in another frying pan in vegetable oil.

As soon as all the vegetables are ready, we begin to mince. You can buy it ready-made, but you can also grind the meat yourself in a meat grinder. Be sure to take meat from different animals, then you will get a delicious, juicy dish that will give you an unforgettable aroma. As soon as the minced meat is ready, put the frying pan on the fire.

As soon as the vegetable oil is hot, first lay out the minced meat itself. Then fry it until golden or just dark.

  • Garlic powder or two finely chopped cloves
  • Two or three chili peppers
  • A piece of cheese

Place minced meat with a small amount of vegetable oil in a frying pan.

At the same time, open the beans and simmer/boil them in another frying pan over medium heat. The softer the beans, the better. Remember to add water (a little) as needed.

Finely chop the onion and both chili peppers.

Squeeze half a lime into them and mix everything, squeezing lightly. The picture should show that the onions have turned pink.

The minced meat is fried. Drain the liquid and let the minced meat sit in a colander. The less fat the better.
